🌶️ Spicy Couscous with Garlic, Mango Chutney & Apples

A vibrant and flavorful dish, this spicy couscous combines garlic, curry paste, mango chutney, and fresh fruit for a sweet‑savory balance. Perfect served warm or cold as a side or light main.

Ingredients

  • ½ cup olive oil
  • 4 small cloves garlic, slivered
  • 1 cup couscous
  • 2½ cups vegetable broth
  • 1 tablespoon soy sauce
  • 3 tablespoons mild curry paste
  • ¼ cup mango chutney
  • ¼ cup golden raisins
  • ¼ cup snipped fresh chives
  • 4‑inch piece cucumber, seeded and chopped
  • 2 red apples, cored and chopped

Instructions

    Sauté garlic & couscous: Heat olive oil in a casserole over medium heat. Add garlic and cook until lightly golden. Stir in couscous and cook gently for 2 minutes. Set aside.

    Prepare curry broth: In a saucepan, combine vegetable broth, soy sauce, curry paste, mango chutney, and golden raisins. Bring to a boil over high heat.

    Combine: Pour the hot curry mixture into the couscous. Mix well, cover tightly, and let stand for 20 minutes.

    Finish: Remove lid, stir in chives, cucumber, and apples.
