Ingredients

- •4 small cloves garlic, slivered
- •1 cup couscous
- •2½ cups vegetable broth
- •1 tablespoon soy sauce
- •3 tablespoons mild curry paste
- •¼ cup mango chutney
- •¼ cup golden raisins
- •¼ cup snipped fresh chives
- •4‑inch piece cucumber, seeded and chopped
- •2 red apples, cored and chopped

Sauté garlic & couscous: Heat olive oil in a casserole over medium heat. Add garlic and cook until lightly golden. Stir in couscous and cook gently for 2 minutes. Set aside.

Prepare curry broth: In a saucepan, combine vegetable broth, soy sauce, curry paste, mango chutney, and golden raisins. Bring to a boil over high heat.
