🧄 Garlic Toast with Olive Tapenade & Fresh Tomatoes

A Mediterranean-inspired appetizer that’s bursting with flavor. This garlic toast with olive paste and tomatoes is perfect for parties, picnics, or a light snack.

Ingredients

  • 8 slices ciabatta or Italian country bread (1-inch thick), lightly toasted on both sides
  • 1 large garlic clove, halved
  • 2 teaspoons capers
  • 40 pitted black olives
  • ½ cup extra-virgin olive oil
  • 8–10 fresh basil leaves
  • Pinch of salt and freshly ground black pepper
  • 4 ripe tomatoes, coarsely chopped

Instructions

    Garlic rub: Rub the toasted bread slices with the cut side of the garlic. Set the garlic aside. Arrange the toast slices on a large serving platter.

    Make the olive paste: In a food processor, combine the reserved garlic, capers, olives, ¼ cup of olive oil, most of the basil, salt, and pepper. Blend until just combined — the texture should be slightly coarse.

    Assemble: Spread the olive paste evenly over each toast slice. Top with chopped tomatoes.

    Finish: Drizzle with the remaining olive oil, if desired. Tear the remaining basil leaves and sprinkle over the top as garnish.
