🌿 Broiled Pepper Salad with Garlic, Basil & Sun‑Dried Tomatoes

This broiled pepper salad is a vibrant Mediterranean dish featuring sweet roasted peppers, garlic, balsamic vinegar, and sun‑dried tomatoes. Finished with fresh basil, it’s perfect as a side or appetizer.

Ingredients

  • •2 red bell peppers, quartered lengthwise and seeded
  • •2 yellow bell peppers, quartered lengthwise and seeded
  • •Small pinch of salt
  • •Small pinch of freshly ground black pepper
  • •⅓ cup extra‑virgin olive oil
  • •2 teaspoons balsamic vinegar
  • •1 clove garlic, crushed or minced
  • •5 sun‑dried tomatoes in oil, cut into strips
  • •3 tablespoons torn fresh basil leaves

Instructions

    Broil peppers: Place peppers skin‑side up under the broiler until blackened and blistered.

    Steam & peel: Transfer peppers to a plastic bag, seal, and let steam until cool enough to handle. Peel off skins and cut peppers into strips.

    Assemble salad: Arrange pepper strips on a platter with any juices. Season with salt and pepper.

    Dress: Drizzle with olive oil and balsamic vinegar. Add garlic and sun‑dried tomatoes, then gently toss to coat.
