Instructions

  1. 1

Prepare dough: Sift flour, baking powder, and salt into a bowl. Stir in half the oregano and the sliced olives. Make a well in the center, add 3 tablespoons olive oil and the water, and mix into a soft dough. Roll out to fit a 9‑inch ovenproof skillet.

  2. 2

Cook base: Heat 1 tablespoon olive oil in the skillet. Cook the dough over medium‑low heat for about 4 minutes, until the base is golden. Transfer to a baking sheet.

  3. 3

Flip & cook: Add the remaining 1 tablespoon olive oil to the skillet. Slide the dough back in, uncooked side down, and cook for another 4–5 minutes.

  4. 4

Top pizza: Sprinkle garlic and Gorgonzola cubes evenly over the dough. Cook until the bottom is golden, then transfer under the broiler until the cheese is bubbling.

  5. 5

Finish: Garnish with the remaining oregano and a pinch of black pepper. Serve hot.

Yield: Serves 4
