🥔 Herby Potato Pie with Garlic & Cream
A rustic and comforting dish, this herby potato pie layers thinly sliced potatoes with garlic, fresh herbs, and cream, all encased in golden puff pastry. Perfect served warm or cold as a hearty side or vegetarian main.
Ingredients

- •1 sheet (about 8 ounces) frozen puff pastry dough, thawed
- •2 pounds salad potatoes, thinly sliced
- •½ teaspoon salt
- •½ teaspoon freshly ground black pepper
- •3 cloves garlic, minced
- •⅓ cup chopped fresh mixed herbs (parsley, oregano, thyme)
- •⅓ cup whipping cream
- •1 egg, beaten

Preheat oven to 375°F (190°C).

Prepare base: Roll out three‑quarters of the puff pastry large enough to line a 2½‑pint baking dish.

Layer potatoes: Arrange potato slices in layers inside the pastry, sprinkling each layer with salt, pepper, garlic, and herbs.

Add cream & egg: Pour whipping cream and most of the beaten egg over the layered potatoes.

Cover pie: Roll out remaining pastry and place on top. Seal edges. Brush the top with the rest of the beaten egg.
