🔥 Red-Hot Ribs with Spicy Garlic-Chili Glaze

These fiery pork spareribs are coated in a bold, tangy glaze made with garlic, fresh chiles, honey, mustard, and tomato paste. Perfect for spice lovers and weekend roasts.

Ingredients

For the Sauce:

  • 2 teaspoons chili oil
  • 4 large cloves garlic, crushed or minced
  • 3–4 small fresh chiles, seeded and finely chopped
  • ⅔ cup tomato paste or ketchup
  • ⅔ cup malt vinegar
  • 5 tablespoons honey
  • 2 tablespoons Dijon mustard
  • Large dash Worcestershire sauce
  • 1½ cups chicken broth
  • Large pinch of salt
  • Large pinch of freshly ground black pepper

For the Ribs:

  • 4 pounds lean pork spareribs

Instructions

    Preheat oven to 375°F (190°C).

    Make the sauce: In a saucepan over medium heat, warm the chili oil. Add garlic and chopped chiles, and stir-fry for 30 seconds. Stir in tomato paste, vinegar, honey, mustard, Worcestershire sauce, chicken broth, salt, and pepper. Bring to a boil, then reduce heat and simmer gently for 10 minutes.

    Roast the ribs: Place ribs in a large roasting pan and brush with a little of the sauce. Roast for 30 minutes, then drain off any excess fat.

    Finish with glaze: Spoon the remaining sauce over the ribs. Continue roasting for 1 hour, turning and basting occasionally, until the ribs are tender and caramelized.
