🍄 Mushroom Filo Tartlets with Garlic & Thyme

Crispy filo pastry shells filled with a savory mushroom, garlic, and shallot mixture — these mushroom filo tartlets make an elegant appetizer or party snack.

Ingredients

  • 5 ounces filo pastry, thawed if frozen
  • ½ cup butter, melted (divided)
  • 1 clove garlic, minced
  • 2 shallots, minced
  • 1 pound mixed mushrooms, sliced
  • ½ cup dry white wine
  • 1 teaspoon fresh thyme leaves
  • Large pinch of salt
  • Freshly ground black pepper

Instructions

    Preheat oven to 400°F (200°C). Lightly grease four 4‑inch tart pans.

    Prepare pastry shells: Cut filo pastry into twelve 4‑inch squares. Brush with half the melted butter. Line each tart pan with three squares, rotating each layer a third turn to create a jagged edge. Bake for 10 minutes, until golden.

    Cook filling: In a skillet over medium heat, sauté garlic and shallots in the remaining butter until golden. Add mushrooms, wine, and thyme. Cook for 2–3 minutes, until mushrooms soften. Season with salt and pepper.

    Assemble tartlets: Spoon mushroom mixture into baked filo shells. Serve warm.
