🌶️ Chorizo & Cherry Tomato Skillet with Bacon, Garlic & Olives
This bold and savory dish features spicy chorizo, smoky bacon, sweet cherry tomatoes, and briny olives — all sautéed to perfection and finished with fresh parsley.

Ingredients

- •6–8 ounces thick‑cut smoked Canadian bacon, cut into matchsticks
- •1 Bermuda or red onion, halved and thinly sliced
- •2 cloves garlic, crushed or minced
- •1 pound mixed red and yellow cherry tomatoes
- •½ cup pitted black olives
- •Small pinch of salt
- •Large pinch of freshly ground black pepper
- •⅓ cup chopped fresh parsley

Brown the meats: In a large skillet over medium‑high heat, sauté the chorizo and bacon for 2–3 minutes until browned. Remove and drain on paper towels.
