🌶️ Chorizo & Cherry Tomato Skillet with Bacon, Garlic & Olives

This bold and savory dish features spicy chorizo, smoky bacon, sweet cherry tomatoes, and briny olives — all sautéed to perfection and finished with fresh parsley.

Ingredients

  • 1 pound chorizo or other spicy sausage, thickly sliced
  • 6–8 ounces thick‑cut smoked Canadian bacon, cut into matchsticks
  • 1 Bermuda or red onion, halved and thinly sliced
  • 2 cloves garlic, crushed or minced
  • 1 pound mixed red and yellow cherry tomatoes
  • ½ cup pitted black olives
  • Small pinch of salt
  • Large pinch of freshly ground black pepper
  • ⅓ cup chopped fresh parsley

Instructions

    Brown the meats: In a large skillet over medium‑high heat, sauté the chorizo and bacon for 2–3 minutes until browned. Remove and drain on paper towels.

    Sauté aromatics: In the rendered fat, cook the onion and garlic for about 6 minutes, until lightly golden.

    Add vegetables: Stir in the cherry tomatoes and olives. Cook for 3–4 minutes, just until the tomatoes are warmed through but still hold their shape.

    Finish: Return the sausage and bacon to the pan. Season with salt and pepper, sprinkle with parsley, and serve immediately.
