🥩 Mediterranean Steak Broil with Marinated Vegetables & Rustic Bread

Ingredients

  • 4 sirloin steaks, 1-inch thick, trimmed of excess fat
  • ½ cup olive oil
  • 2 large cloves garlic, crushed or minced
  • 3 tablespoons sun-dried tomato paste
  • ½ cup red wine
  • 3 tablespoons torn fresh oregano
  • ½ teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 1 small eggplant, cut into 2-inch thick slices
  • 1 red bell pepper, halved, seeded, and cut into eighths
  • 2 small zucchini, halved lengthwise
  • 1 pound small yellow pattypan squash
  • 8 asparagus tips
  • Rustic crusty loaf, for serving

Instructions

    Marinate the steaks: Place steaks in a shallow non-metallic dish. In a bowl, mix olive oil, garlic, sun-dried tomato paste, red wine, oregano, salt, and pepper. Pour over the steaks and turn to coat. Cover and marinate for at least 1 hour at room temperature or up to 24 hours in the refrigerator.

    Add vegetables: Add eggplant, bell pepper, zucchini, squash, and asparagus to the marinade. Turn to coat, cover, and marinate for an additional 30 minutes.

    Broil & serve: Broil steaks and vegetables until cooked to your desired doneness and lightly charred. Serve hot with slices of rustic crusty bread.
