🌶️ Spicy Chicken Kebabs with Toasted Almond Marinade & Mango Chutney
Tender chicken thighs marinated in a creamy blend of yogurt, garlic, ginger, lime, toasted almonds, and warm spices — broiled to perfection and served with fragrant rice, sweet mango chutney, and lime wedges.
Ingredients
For the Marinade:
- •½ cup whole blanched almonds
- •12 chicken thighs, skinned, boned, and cut into bite-sized pieces
- •½ cup plain yogurt
- •4 cloves garlic, crushed
- •1-inch piece fresh ginger, peeled and crushed
- •Juice of 1 lime
- •1 teaspoon ground coriander
- •2 teaspoons ground cumin
- •Large pinch ground turmeric
- •½ teaspoon salt
- •½ teaspoon freshly ground black pepper
For Serving:
- •3 cups cooked rice
- •½ cup mango chutney
- •Lime, cut into 4 wedges

Toast the almonds: Spread almonds on foil and bake at 400°F (200°C) for 5 minutes, or until lightly golden. Cool and finely chop.

Marinate the chicken: In a shallow non-metallic dish, mix yogurt, garlic, ginger, lime juice, chopped almonds, coriander, cumin, turmeric, salt, and pepper. Add chicken pieces and turn to coat. Cover and marinate for at least 30 minutes, or up to 6 hours in the refrigerator.

Prepare skewers: Soak 8 bamboo skewers in cold water for 30 minutes. Pat dry and thread marinated chicken onto skewers.

Broil: Broil kebabs on high for 10–12 minutes, turning once, until golden and cooked through.
